To all the candy makers in the world, please let me apologize before I begin. I do not own a candy thermometer, nor do I know what a “soft ball stage” remotely means. Last Christmas at our annual office cookie exchange, I really wanted to prepare something other than a cookie. I desired to try my hand at homeade caramels, however, the majority of recipes I recovered from the internet were overwhelming at best. In my search for simplicity, I discovered this easy, delicious recipe for microwave caramels.
With very few ingredients and six minutes total cooking time, I love this! (I’m all about quick and easy) I found that I loved them even more with a sprinkling of kosher or sea salt. I imagine these would also be delicious with a coating of chocolate as well, I believe the possibilities are endless!I admit I probably have no career ahead of me as a professional candy maker, but that’s ok! These soft caramels satisfy my sweet/salty craving and provide a special treat for the holiday gift giving. Enjoy!
