caramel#2To all the candy makers in the world, please let me apologize before I begin.  I do not own a candy thermometer, nor do I know what a “soft ball stage” remotely means.  Last Christmas at our annual office cookie exchange, I really wanted to prepare something other than a cookie.  I desired to try my hand at homeade caramels, however, the majority of recipes I recovered from the internet were overwhelming at best.  In my search for simplicity, I discovered this easy, delicious recipe for microwave caramels.

With very few ingredients and six minutes total cooking time, I love this!  (I’m all about quick and easy)  I found that I loved them even more with a sprinkling of kosher or sea salt.  I imagine these would also be delicious with a coating of chocolate as well,  I believe the possibilities are endless!caramels#3I admit I probably have no career ahead of me as a professional candy maker, but that’s ok!  These soft caramels satisfy my sweet/salty craving and provide a special treat for the holiday gift giving.  Enjoy!

Soft Microwave Caramels

Ingredients

1/4 cup butter

1/2 cup sugar

1/2 cup brown sugar

1/2 cup light corn syrup

1/2 cup sweetened condensed milk

1 teaspoon vanilla

Directions

  1. Combine all ingredients in microwave safe bowl
  2. Microwave on high for 6 minutes, stirring every 2 minutes
  3. Stir until smooth and pour into a buttered 8×8 inch square pan
  4. Cool then cut into small pieces
  5. Wrap in wax paper and store in air-tight container

*If desired, sprinkle with kosher or coarse sea salt
